This weeks WHB is hosted by Ulrike at Küchenlatein.

A while ago I read about a salad with blueberries at “Frau Schaumlöffel” and bookmarked it on my MemoBoard to give it a try later on. This week I found delicious looking blueberries and remembered this salad.

It was very very tasty and even G. loved it ‘though is not the experimental type when it comes to his food… :blush:

Rocket salad with camembert & blueberries

Toskana Brot Rucola-Camembert-Blueberry Salad Rucola-Camembert-Blueberry Salad Rucola-Camembert-Blueberry Salad

serves 2

100 grams rocket
200 grams blueberries
1 camembert[1]
oil[2]
vinegar[3]
250 grams yoghurt
salt, pepper
some fresh chives
1 tablespoon mustard

For the dressing mix oil, vinegar, yoghurt chives and mustard.

Season with salt and pepper.

Arrange rocket on plates, add blueberries and add the dressing.

Enjoy!!

We had it together with some quick roasted chicken breasts and seasoned it with 1 teaspoon Ras el Hanout.

  2. I used my olive oil with white truffles ↩ back
  3. I used balsamic vinegar, the original recipe calls for raspberry ↩ back
