Being in need for some real quick and tasty dishes seems to grow a habit around here :mad: – but well, on the other hand it drives me to be even more experimental at cooking as my cooking habit already is…

No time to cook in advance yesterday left me to a very experimental dish today… Let’s call it “Catfish all in one pot”

“Catfish all in one pot”

~ 200 gr Catfish
100 gr Panchetta
2 big sweet potatoes
200 gr grean beans
100 ml fish stock[1]
3 branches fresh rosemary
salt
pepper
some ground ginger
juice of 1 lime

Cut Catfish into ~5 cm. Cut sweet potatoes into not too thin slices and cut beans into 1 cm pieces.

First place the beans in a casserole then top with catfish, season with salt, pepper and juice of 1 lime.

Cover with slices of one sweet potatoe. Put the pancetta neatly on top and then pile up with the scond sweet potatoe slices.

Add the fish stock and cover with the rosemary. Cover with tin foil or (in my case) with a plate.

Normally I’d bake it for about 30 – 45 minutes at 180° but as we have no oven in the kitchen here I had it in the microwave for about 20 minutes.
