[Waiter, there's something in my ...] – Melt-in-your-mouth shin stew

As I said a few entries before, I wanted to attend the newly established blogging event “waiter, there’s something in my…“.

One reason is that I need to polish my written english a little more :blush: and the other is to be forced to try out new recipes more often this year.

For this I flipped through my cook books :^^: a little bit and found at Jamie Oliver’s “Cook with Jamie” a womderful stew.

Melt-in-your-mouth shin stew[1]

serves 4

    olive oil
    2 red onions roughly copped
    3 carrots peeled and roughly chopped
    3 sticks of celery trimmed and roughly chopped
    4 cloves of garlic unpeeled
    a few springs of fresh rosemary
    2 bay leaves
    a small handfull of dried porcinis
    1 cinnamon stick
    1kg / 2lb 3oz shin of beef[2]
    sea salt
    freshly ground pepper
    1 tablespoon flour
    2x 400g tinned good quality plum tomatoes
    2/3 bottle Chianti


  • Preheat your oven to 180°C (350°F or gas 4).
  • Heat a splash of olive oil in a pan and gentrly fry the onions, carrots, celery, garlic, herbs, porcini and cinnamon for about 5 minutes utils softened slightly.
  • Toss the beef in an little seasoned flour.
  • Add the meat to the pan and stir together, then add the tomatoes, wine and a pinch of salt and pepper.
  • Bring to boil and cover with tinfoil and place it in the oven until the beef is meltingly tender and can be broken up with a spoon.
  • Taste an check the seasoning. Remove the cinnamon stick and rosemary spings.
  • Serve.
