<p><a href="http://lifesafeast.blogspot.com" target="_blank" class="liexternal">Jamie</a> is hosting <a href="http://whatsforlunchhoney.blogspot.com/2006/04/my-monthly-mingle.html" target="_blank" class="liexternal">Meeta&#8217;s Monthly Mingle</a> this month and the theme both girls chose is wonderful. What could you wish more for than <a href="http://lifesafeast.blogspot.com/2010/01/bread-chocolate.html" target="_blank" class="liexternal">chocolate and bread</a> in one event?</p>
<p>When I was thinking up what to prepare for this event I first chose a recipe for Chocolate Swirl Bread but after the second fail bake I decided to bake something I am more familiar with. </p>
<p>Since my secret supply of brioche in the freezer was diminishing too I decided to bake a tweak of my favorite brioche recipe. </p>

<p>And they really turned out to be little cuties: </p>
<div class="zutaten">20 gr fresh yeast<br />
1 large egg<br />
250 ml milk<br />
75 gr butter<br />
500 gr white spelt flour<br />
75 gr honey<br />
1 pinch of salt<br />
3-4 tbs cocoa or shredded dark chocolate</div>
<p>I warmed the milk in a bowl with the butter then added honey and yeast and let rest for a few minutes.</p>
<p>Combine all other ingredients in another bowl. Gradually add the milk mixture and knead until it forms a smooth ball. If you use spelt flour be careful not to overknead!</p>
<p>Cover and let rise until doubled (normally about one hour). Preheat oven to 200°C.</p>

<p>I tied a knots and then put the little precious ones in my muffin tin(s).</p>
<p>Let them rise a second time until doubled<em> (again if you are working with spelt be very careful that they do not overproof!! you&#8217;d be very disappointed otherwise!)</em>.</p>
<p>Do not forget to brush them with a little melted butter or egg wash before they go into the oven.</p>
<p>Bake in the oven for about 20 minutes.</p>

<p>When they come out of the oven you can brush them with some additional melted butter but since I like to eat my brioches with butter and jam anyway I skip this step most of the time&#8230;

			<content:encoded><![CDATA[<p>The <strong>Bread Baking Babes</strong> presented us with the first challenge of 2010: <strong><a href="http://cookiebakerlynn.blogspot.com/2010/01/some-baking-naan-sense.html" target="_blank" class="liexternal">Naan</a>. </strong><br />
This month <a href="http://cookiebakerlynn.blogspot.com/2010/01/some-baking-naan-sense.html" target="_blank" class="liexternal">Lynn of Cookie Baker Lynn</a> was Kitchen Hostess of the Month and came up with the recipe for this gorgeous bread. </p>
<p>Since we were planning the family birthday come together for Mrs Q.&#8217;s and Mr T.&#8217;s Birthday this Saturday we came up with the idea to use the naan as starters for the family lunch.</p>

<p>We made plain Naan and topped them with smoked salmon and prosciutto and Grana Padano. They were a big hit. </p>
<p>I planned to make them quite small since they were supposed to be served a starters but then they puffed too much and turned out bigger as expected ;)<br />
No big deal tho, we cut them in quarters and they were simply delicious!!</p>

<p>The dough was wonderful to work with and quite easy and quick too.<br />
Loved the texture of the bread too. </p>
<p>Unfortunately I have no pics of the finished Naan since I was in the kitchen finishing the last batch while the others already were nibbling on the first batch of starters.<br />
I believe that one of the others made a pic and as soon as I get hold of it I will show it to you here. </p>

We are so sorry Anne and family. Our bestest puurrrs and hugs and thoughts to you all! </p>

<p>Lovely <a href="http://lifesafeast.blogspot.com/2010/01/focaccia-farcita-stuffed-focaccia.html" target="_blank" class="liexternal">Jamie of Life&#8217;s a Feast</a> is hosting <a href="http://kochtopf.twoday.net/stories/4124192/" target="_blank" class="liexternal">BBD #26</a> this month and it&#8217;s her birthday too!</p>
<p>So she asked us to bring bread to her Birthday party! What a lovely invitation.</p>
<p>She even prepared a lovely <a href="http://lifesafeast.blogspot.com/2010/01/focaccia-farcita-stuffed-focaccia.html" target="_blank" class="liexternal">stuffed focaccia</a> beforehand for us to nibble on while baking bread for her party!</p>
<p>I hadn&#8217;t decided yet on which bread to bake this month&#8230; but while I was preparing my pizza dough this past Saturday for my dinner, I remembered her lovely focaccia and so the idea of doing a <em><strong>Pizza &#8220;Calzone style&#8221;</strong></em> instead of the ordinary pizza I had originally in mind popped into my head.</p>

It is made as a type of <a href="http://en.wikipedia.org/wiki/Pizza" title="Pizza" target="_blank" rel="nofollow" class="liwikipedia">pizza</a> folded over and shaped like a crescent before cooked.<sup id="cite_ref-1"><a href="http://en.wikipedia.org/wiki/Calzone#cite_note-1" target="_blank" rel="nofollow" class="liwikipedia"><span>[</span>2<span>]</span></a></sup> The typical calzone is stuffed with tomato and mozzarella, and may include other ingredients usually associated with pizza toppings.<br />

<p>I like to add my herbs to the pizza dough already because this way I get a real yummy dough scented with basil, rosemary and thyme&#8230; it does make such a difference to plain pizza dough &#8211; at least in my opinion. So I used my most favourite pizza dough:</p>
<div class="zutaten">500 gr flour <small>(spelt or wheat as you prefer)</small><br />
250-300 gr warm water<br />
1 package active dry yeast<br />
5-6 Tbs olive oil<br />
10 gr salt<br />
a pinch of brown sugar<br />
2-3 Tbs finely cut rosemary. thyme and basil <small>(fresh or dried)</small><br />
<strong><br />
topping:</strong><br />
2 chicken breasts<br />
8 Tbs tomato purree <small>(I use my homemade one)</small><br />
2 Tbs basil paste <small>(again this is home made)</small><br />
2 gloves of garlic<small> (if you like)</small><br />
about 100-150 gr grated cheese <small>(I used raclette cheese I had some leftovers and &#8220;Bergk&#228;se&#8221; which is quite mature but you can use any kind you like)</small></div>
<p>Mix all ingredients well in your food processor (I used my Kitchen Aid with the dough hook at speed 2-3) untila firm dough ball forms. I like to give it some extra kneads per hand before I let it rest covered with a kitchen towel until doubled in size (usually abnout 1 hour)</p>
<p>Then I divided the dough in two parts. rolling out the first one and placed it into my pan, topped it first with tomato purree, then with basil paste, added then chopped chicken breasts and garlic and finally cover with cheese.</p>
<p>Roll out the second part of the dough and place on top of pizza making sure everything is covered, firmly tucking the ends under the first dough to seal everything inside.</p>
<p>With a sharpe knife knife cute some holes into the topper to let access any steam.</p>
<p>Bake at 180-200°C in the oven for about 45 minutes. Optionally you can brush top with rosemary or basil scented olive oil&#8230;</p>
