Xmas Cookies 2011 - White Chocolate & Cranberry Cookies

The perfect treat for white choc lovers!

Verdict:

Drop cookies, I love them. They are so and yet delicious. No need to bother with rolling out the dough, chilling it, find the right sized cookie cutter and all that stuff. Yet they are delicious and I could eat a whole batch in no time. The white chocolate gives a nice sweetness but does not make them overly sweet. The Cranberries give a nice chewy addition while the butter makes them melt in your mouth! Perfect in my book!

White Chocolate Cookies

200 g warm butter
50 g sugar
50 g brown sugar
pinch of salt
230 g white spelt flour
0,5 teaspoons baking powder
0,5 teaspoons baking soda
150 g white chocolate
2 teaspoons grated orange zest
2 teaspoons dried cranberries

Method:

  1. Cream butter, sugar(s) and salt until creamy white (about 8 minutes)
  2. Mix flour, baking powder and baking soda and add the mixture to the creamy butter, mix until well incorporated (do no overmix!)
  3. Cut white chocolate in little cubes and add them with orange zest and cranberries to the cookie dough.
  4. Use a teaspoon and drop little droplets of cookie dough on your baking sheet. Make sure you leave enough space between them as they will spread  little…
  5. Bake at 180°C  for about 13 minutes until they are lightly brown. Let cool…
