BBB - Russian Black Bread

WOW! I finally made it! I finished the new challenge of our dear Bread Baking Babes.

Görel of Grain Doe was Kitchen Babe of the month this time and came up with a fabulous dark bread (I love rye breads!!): Russian Black Bread

It took me a while longer to prepare the bread than I thought because “Harry” my rye sourdough seemed to feel a bit neglected during my vacation and so he was not happy to see me and needed some more fuss and loving than I expected. But in the end we are friends again ;o)

Other than that the bread was really easy to prepare except for the dough to be a bit more sticky than I like my doughs that I have to work with…

The only change I made this time was that I used whole rye flour and substituted the breadflour with a spelt/rice flour mix (…the wheat, you know *smile*)

So here I present you my baby:

Looks nice, huh?

I think I should have given him a bit more time to rise before baking but with spelt flour you better be safe than sorry with proofing times.

I like the texture and the taste of the bread very much. Had two slices this morning with butter and it was great!!

    Oh, that bread does look so pretty! Did you learn how to bake bread on your bake-kay-shun? LOL, really though, I hope you post more bay-kay-shun photos, your other ones on the other blog are so nice!

    Yes, it looks great! I loved this bread, and liked the idea of using up old scraps, as well.
