Sukkar bi Tahin – Beirut Tahini Swirls
Dear gorgeous Babes, I bet you thought I’d not make it in time this month, huh? LOL
This month I am really really late, I know – though when I read what you have been up to at Natashya’s blog I was all “must.try.now”. *nods*
Real life hit me quite hard or full blast into the face right after this thought and I admit I nearly forgot all about the BBB this month. Bad girl I am!
Now I am back – in one piece – at least I hope so, somehow I am back for sure… and what could I better do than celebrate this with baking a BBB Bread – evon more since it is a sweet challenge this time?! :o)
Here is what I did.
1/2 tsp dry yeast (instant)
240 ml/g hand warm water
± 400 g white spelt flour
2 tsp sugar
1 Tbsp olive oil
100 g tahini
100 g sugar
I followed the instructions given by Natashya. Except for the rising times. Working with spelt ya know – does not allow that long rising times as long as you do not want your bakeware be wandering all over your bakingsheet and end up kinda flat…
Ayeyes flat: I should have read Natashya’s instructions more carefully when she said:
The swirls should end up like puffy pita. If they are very thin they will be crispy, if they are not rolled enough, they will puff up like cinnamon rolls. We are striving for a flatbread pastry that puffs a little.
Guess what? Mine puffed. Oh boy and how they puffed. the first batch I baked even more then the second batch. *sigh*
They are very good tho but not as they *should* be I figure!!

Yours are really gorgeous! I prefer these puffy ones to the flatter, crispier ones. Beautiful! I didn’t get this done on time, but I so want to make them.
*should* … I think they should be great to eat and yours look great to eat so they are as the *should* be!
