Guinness Cupcakes with Cream Cheese Frosting
For St.Patricks Day this year (I know, I know it’s been a while since St Patricks Day, but I haven’t had the time to blog all the things we made then till yet) we had a cozy Irish dinner at Babs’ home.
On of the goodies we snarfed down were these gorgeous cupcakes…
Guinness Cupcakes with Cream Cheese Frosting
Recipe adapted from Feast by Nigella Lawson
125 ml Guinness (at room temperature)
75 ml sour cream (or thick plain yoghurt works too)
125 grams unsalted butter
1 egg
1/2 tablespoon vanilla extract
40 g unsweetened cocoa
140 grams spelt flour
200 grams caster sugar
1 1/4 teaspoons baking powder
Preheat the oven to 180°C, and butter and line your muffin or cupcake tin with papers.
Melt the butter add Guinness at room temperature and whisk in the cocoa and sugar.
Beat the sour cream with the eggs and vanilla and then pour into the pan and whisk in the flour and baking powder.
Pour the cake batter into the cupcake cups about 3/4 of the way up, it will rise up a little but not too much.
Bake for 20-25 minutes. Leave to cool in the tin for 10 minutes and remove to cool on a rack.
150 g Philadelphia cream cheese
65 ml heavy cream
75 grams icing sugar
Lightly whip the cream cheese until smooth, sift over the confectioners’ sugar and then beat them both together. Or do this in a processor, putting the unsifted confectioners’ sugar in first and blitz to remove lumps before adding the cheese.
Add the cream and beat again until it makes a spreadable consistency. Ice the top of the black cupcakes so that it resembles the frothy top of the famous pint.
As you can see the frosting was not 100% cooperative but it tasted gorgeous tho.
We loved the cupcakes! I sure will make them again together with my Guinness Potato Bread.










Wow! I am so amazed! Guinness in cupcakes? They look rich and decadent, and I guess they were as good as they look considering you all snarfed them down.
