Broccoli & Carrot Cream soup

I love soups! Especially cream soups. This one is a very quick and yet very delicious one I made this morning:
500 gr broccoli
7-8 carrots (sweet ones)
2 small onions
2 garlic cloves
salt & pepper
200 ml veggie stock
200 ml coconut milk
some fresh cilantro

some fresh cilantro
Cut the veggies in not too small chunks. Combine them with the veggie stock in a soup pan and fill up with water ’till everything is well covered. Season slightly with salt and pepper. Let cook until everything is mellow.
Seperate the veggies from the soup and purree everything till you have a smooth thick pulp. Add some of the soup and about 200 ml coconut milk. Stir until everything is smooth add as much liquid till the soup consistency meets your preference ( I like mine real creamy and rather thick).
Save the rest of the veggie soup for later…
Before serving sprinkle with some fresh picked leafes of cilantro! Mmmmmmh yummy!
