[Weekend Herb Blogging] – When in doubt: make soup!

This week Zorra of Kochtopf is hosting WHB.
Some time ago I saw DKM posting about a Mushroom Soup. It looked so yummy I just had to try it myself!
Here is what I came up with (well I had to change the original a bit). It was as delicious as it looked at DKM’s blog and I really loved it. I think this will become one of my favorites… :)

Original Recipe is called “Anthony Bourdain’s Mushroom Soup” (see link above) but I call it
DKM’s Mushroom Soup
6 tablespoons butter (use olive oil if Vegan)1
1 onion, sliced thin2
12 oz. mushrooms, halved
4 cups veggie stock
Parsley3
2 oz. Sherry4
salt and pepper

- I used my white truffle scented olive oil
- used two small red onions
- used some fresh thyme and cilantro
- had no Sherry on hand, used Jameson instead













It looks really good. I’m trying to figure out what is so artfully drizzled on top? Yogurt?

Wow! This looks great. I really like the idea of adding sherry – am sure that makes for a great flavour with the mushrooms.
