[Weekend Herb Blogging] – Skewers with Turkey & Veggies and thyme-d rice
It’s been weeks since I’ve been participating in WHB and boy I missed it.
…but there was not much time to blog about food lately and so many other things held me busy besides blogging. There are lots of things I wanted to say and blog here on my foodblog but allas there was no time at all.
But this week I am back again to my normal self and hopefully to regular WHB-blogging…

Skewers with Turkey & Veggies and thyme-d rice
1 medium turkey breast
5-8 very small tomatoes
1 small zucchini
1 small red onion
2-4 garlic cloves
2 small bananas
oil
salt
pepper
fresh rosemary
thyme
2 portions cooked rice
Initially I intended to use the rosemary twigs as skewers but they were too soft and I was not able to spike the things onto them porpperly so I used skewers and poked the rosemary only through the zucchini parts.
Cut all ingredients in smiliar parts, non of them should be too large or too small. Skew the parts on your skewers and season them all with salt and pepper. Use a small amount of oil to drip onto.
Bake them in your oven at 200°C for about 40 minutes .
Meanwhile cook your rice and add about 2 tablespoons of fresh thyme.
Arrange the rice and the skewers nicley on a plate and enjoy!

It’s a quite easy and quick to make meal and we liked it very much as I made it the evening before and we had them for lunch the next day at work. It all worked out fine and was very delicious.
